Cos'è il glutine

Il glutine è un composto lipoproteico generato dall'unione di due differenti proteine: le gladine e le glutenine presenti nella parte interna di alcuni cereali quali frumento, farro, segale, kamut e orzo.
La struttura complessa del glutine nasce dunque da due differenti proteine che assorbono acqua. Il rapporto tra queste due proteine determina la forza del glutine e differenzia i diversi tipi di farina nelle loro qualità tecnologiche. Un glutine tenace ed estensibile è alla base delle farine utilizzate per la panificazione, mentre un glutine meno resistente dà luogo a farine più deboli ideali per la realizzazioni di dolci e biscotti. La farina di frumento contiene glutine in un rapporto che varia dal 10 al 15% del suo peso.
La quantità di glutine si determina in laboratorio impastando in un mortaio farina ed acqua. L'impasto ottenuto viene "lavato" con una soluzione salina (4% fosfato mono-bisodico, pH 6.8 e 2% NaCl) manualmente o con un apposito lavaglutine. In questo modo si farà scorrere via l'amido lasciando solo la frazione glutinica che è insolubile a contatto di una soluzione salina. La quantità di glutine così ottenuta è definita glutine umido ed è espresso in percentuale tra il peso del campione analizzato ed il glutine estratto; la sua umidità viene misurata in stufa ad 80 °C. Il glutine umido viene essiccato per determinare il glutine secco.
